Meet the Chef
Born and raised in the southeast coastal region of Puglia (Italy) on my family’s vineyard and olive grove. I started working on the farm at a very young age, helping with the vineyards, learning how to preserve our fresh tomatoes and vegetables, learning family recipes and making pasta and sauces from scratch. I discovered my passion for food at an early age, as well as my appreciation for fresh ingredients, flavor, and family dining.
I was formally trained in Italy and immigrated to the United States in 1985. I have managed prestigious restaurants as in New York City,, as well as owned several restaurants on the east coast and in Europe before coming to Carefree, AZ.
My passion for food, wine, and client camaraderie is unsurpassed, All our food is made using fresh ingredients and traditional Italian recipes and techniques. And I strive for impeccable service.

We are an Italian family from Lake Como and this is the real deal. Corrado is from Puglia and, therefore, he serves wonderful combinations of vegetables, pasta, meat and fish. Last night I had the orecchiette a cima di rape (broccoli) with sausage and it was divine. My daughter had the rigatoni amatriciana which tasted like the amatriciana dishes we have had in Rome.”

“Well worth the drive out of the hustle and bustle of the town. With an expansive wine list, authentic Italian cuisine, and a friendly staff, this place far surpassed all expectations. Corrado (the owner) was present talking with guests and ensuring everyone in my party had a good experience. The pasta was perfectly al dente, the recipes were all original and well thought out, the staff was attentive, and the pricing is more than reasonable…Would definitely recommend this place and we will be returning!”
